Message:<\/td>\n Elise with the 2021 CaberNat and the 2021 Pinot Noir P\u00e9t Nat. Every few weeks, we open up one of each wine to check on the fermentation progress. It\u2019s a hard job, but someone\u2019s gotta do it \ud83d\ude0e \nEarly notes on these wines: \n2021 Pinot Noir P\u00e9t Nat: Rose Quartz in color, light bodied with perfectly balanced acidity and bright fruit flavors like raspberry, watermelon and strawberry. The delicate finish on this wine is dreamy. This wine is dry with nice carbonation. I anticipate this will be our best Pinot noir P\u00e9t Nat yet.\n2021 CaberNat: The color is electric red\u26a1\ufe0fit smells like Hawaiian Punch and tastes like a cherry jolly rancher. It\u2019s still actively fermenting, so there\u2019s a kiss of sweetness in this wine, but I do expect it to go fully dry by the end of winter. There\u2019s also a tannic component to this wine on the back end, which is to be expected from a Cabernet Sauvignon grape and makes her taste a bit wild! We\u2019re planning a dosage for this wine – and we\u2019re toying with the idea of adding a splash of brandy – dosage trials are in progress. \nWe\u2019ll continue to keep you in the loop as these wines continue to develop.
